I enjoyed going through Colicchio's "Think Like A Chef" cookbook. I've always wanted to eat in one of his restaurants. One of these days...

I was once close to using the Heimlich maneuver on some guy choking in a restaurant in Hawaii while I was on my honeymoon. But it turned out not to be necessary.

So, I gave him CPR instead.

I've actually had to use it once, successfully, while dining at the Wilson House, in Wilson, NY http://www.thewilsonhouserestaurant.com/. By an odd twist, the Wilson House is owned by Crash and Caren - two of the owners of DACC's where I was sous-chef for 3.5 years!
