Last Fruits of Summer

This is the saddest time of year.  The peppers remaining had to be picked this week.  It always presents a challenge though - hot sauce, salsa, something else?

You tell me!

In years past, frying peppers would be prepped and frozen in meal sized bags.

Sweet peppers and hot would be chopped in the two groups and simply frozen, breaking off a 'chunk' as needed was easy.

I am looking for something weird I can give away Maybe some kind of Sambal.

Roasted peppers in olive oil with garlic cloves. Seal in a jar. Simple but sweet.
