In years past, frying peppers would be prepped and frozen in meal sized bags. Sweet peppers and hot would be chopped in the two groups and simply frozen, breaking off a 'chunk' as needed was easy.
I am looking for something weird I can give away Maybe some kind of Sambal.
Roasted peppers in olive oil with garlic cloves. Seal in a jar. Simple but sweet.
